Kobayashi Sake Brewery, Honjozo, Houmon, Kita no Nishiki

Sake brewed in Hokkaido

I wanted to shout, “What a wonderful day today!” 

Today I came across Kobayashi Sake Brewery’s Kita no Nishiki brand, Honjozo, Houmon. 

I took a sip at room temperature. I was surprised. This is it. This is what sake is. That’s how I would describe it. It has a calm, moderate acidity and bitterness, and a mature, full-bodied taste. 

When poured into a glass, it has a beautiful honey-like color. It is a sake that is full of umami. It is a sake that is for connoisseurs, ignoring all recent trends. It is simply delicious. 

You wouldn’t doubt it if it was called an aged sake. It makes me feel like I don’t need any snacks. But if someone still wants to eat something, It goes well with something light-tasting. For example, simple bread like baguette or white fish dishes. 

And now I have another thing to look forward to. Next time I would like to enjoy this sake warm. So I’m going to buy a 60oz bottle instead of a 24oz bottle tomorrow. This sake will be my go-to drink for a while.
