Kokushi Musou Junmai Ginjo

Sake brewed in Hokkaido

The sake I’m introducing today is Kokushi Musou Junmai Ginjo、 produced by Takasago Sake Brewery in Asahikawa City. The navy blue bottle is distinctive. 

First, I smelled it. The ginjo aroma wasn’t too strong, which is to my liking.

Then I took a sip. As it says on the bottle, it was light and refreshing. I could feel a slight dryness. I wanted to drink this sake chilled in the garden at home in the summer. 

The best snack to go with it would be fried fish topped with tartar sauce and a squeeze of lemon. On second thought, raw oysters with salt and lemon or smoked salmon would also be good. In any case, it goes well with fish dishes. 

If you’re traveling in Hokkaido Japan, why not buy this sake and some white fish sashimi at the supermarket and enjoy them on your hotel room balcony? In this case, I recommend seasoning it with salt and olive oil instead of wasabi and soy sauce.
