Sake brewers and high school students team up Industry-academia collaboration
Asahikawa Agricultural High School and a local industry group that is a professional group of rice growers have teamed up to launch this industry-academia collaboration project in April 2021. In addition to producing sake rice with students from the Agricultural Science Department’s rice specialist group, they are involved in all processes from turning sake rice into sake and commercializing it, including product design, sake brewing, and labeling. They are also developing products using sake lees, which are refined during sake brewing, with the school’s Food Science Department’s meat processing specialist group. (from project brochure)
Asahikawa Agricultural high schools are usually places where students learn about the production and utilization of agricultural crops.However, for the past few years, they have taken a step or two beyond sake rice production and have been participating in a project to learn the process from sake brewing, sake bottle design, and labeling. It will be a very meaningful experience for students to not only produce rice, but also to learn what process it goes through and what kind of product it becomes. By knowing this, they will be able to be conscious of rice production that takes into account the needs of the processor and seller. Furthermore, they will be able to take into consideration the needs of consumers when they are over 20 and can drink this sake.
They are also developing products using sake lees, a by-product of sake production. One of these products is a traditional Japanese sweet drink. I would like to review this product in the near future.
Finally, Takasago Shuzo’s Junmai sake “Iko no Fushizuku”, which they were involved in, was a very delicious sake with both a refined sweetness and a strong dryness. I thought it was a sake that went well with sashimi. It would be best to chill it a little in the refrigerator before drinking it.
The color and design of the bottle are also cool. It reminds me of a beautiful summer. It’s a beautiful bottle that looks great on the table.
