Fukutsukasa Tokubetsu Jyunmai

Sake brewed in Hokkaido

Today I will introduce the Tokubetsu Jyunmai sake of Fukutsukasa Sake Brewery. Fukutsukasa Sake Brewery is located in Kushiro City, which is located on the eastern side of Hokkaido. It is far from Sapporo, and I have wanted to visit it once, but I have not yet been to this brewery. 

First, enjoy it chilled (59°F). 

Its distinctive feature is the strong rice flavor. It is a sake made from rice, so it is only natural that it tastes like rice. It also has a good balance of sweetness and acidity. Although it is sweet, it is not like sugar, but rather the sweetness of rice. 

Next, I had it warmed (113°F). 

Here I was surprised again. Generally, when sake is warmed, the sweetness tends to take precedence, but the sweetness of this sake is mellowed. It also tastes closer to that of an aged sake. 

In addition, it is not too heavy or too light, so it can be paired with a variety of snacks. Today’s snack was Kyushu yakitori, a skewer wrapped in chicken skin and grilled repeatedly with a sugar added soy sauce. At first glance it doesn’t seem like a good combination, but when I tried it, it was delicious. 

It’s the perfect sake to relax and sip quietly on a long night.
